Peppermint Bark

This is one of the easiest and most aesthetic snacks! It has become a Christmas classic for me.

Ingredients

  • About 8-ounces (by weight) of peppermint hard candies

  • 2 (12-ounce) packages dark chocolate candy melts*

  • 2 (12-ounce) packages white candy melts

  • peppermint oil**

Instructions

  • Unwrap the candy canes and put them ina ziploc bag. Put the bag with candies between a dish towel and crush with a rolling pin or meat tenderizer.

  • Line a cookie sheet (or the counter) with a large sheet of waxed paper.

  • Melt the dark chocolate candy melts in a large bowl in the microwave using 30 second intervals. Stir frequently. It it is incredibly easy to burn the chocolate so carefully watch it.

  • Spread the chocolate on the waxed paper in a thin layer that covers the sheet. Work quickly as the candy melts firm up pretty fast.

  • Once the chocolate is set, melt the white chocolate candy melts in the same 30 second intervals.

  • Once the white chocolate is melted, add several drops of the peppermint and oil and stir well. Taste and add more peppermint oil if necessary. It is uprising how strong the oil can be, so start with just a little bit (you can always add more).

  • Once mixed together, pour the white bark mixture over chocolate layer and spread thin.

    • One of the issues I have had is that I have let the dark chocolate cool too much so it hardens. Then when I pour the white chocolate on top, it doesnā€™t set so it ends up breaking apart when I cut it into pieces.

    • If this happens, you can use a heat gun/hairdryer/warming device to soften the dark chocolate so that the white chocolate will stick to it.

  • Finally, sprinkle the crushed peppermint over the top while the chocolate is still soft/melted.

  • Allow to set. Then break into pieces. You can use a knife to do so!
