Chocolate Covered Coffee Beans

Okay, I’m a sucker for these things. They are so stinking good! As you can tell, I did mine fairly quickly so they look a little messy! If you take time and really carefully dip the coffee beans though you can end up with a super tasty little sweet treat though.

I have always wanted to snack on theses suckers like they were candy, but I knew I couldn’t without expecting to be up all evening! So I wanted to try to make a recipe without as much caffeine as the normal espresso bean by using some of my decaf coffee beans. Now, you do have to remember that the chocolate does still have caffeine in it, but this allowed me hopefully not be as jumpy throughout the day while I snack.

I did make a batch of regular coffee beans for my husband who is a little more caffeine tolerant!

Ingredients

  • ½ cup coffee beans

  • ¾ cup dark chocolate chips or baking bars

Instructions

  1. Place a piece of parchment paper on a baking sheet and set aside.

  2. Melt chocolate on the stove top or microwave. Essentially, melt the chocolate!

    • Boiling: Place a pot of water on the burner and let it boil. Once boiling, place another pot on top of the water pot and mix the chocolate.

    • Microwave: In low increments (I did 30 seconds), slowly microwave the chocolate. Between the increments, stir the chocolate to make sure it is all the same consistency.

    • Be very careful not to burn the chocolate, and be sure to not get it wet. Either situation will make it a really gross texture and ruin the chocolate!

  3. Once your chocolate is melted and a liquid consistency, dump your espresso beans.

  4. Remove each coffee bean one by one and set on the parchment paper. To be honest, I was impatient and did several in chunks, but if you would like them to be like the ones you buy in the stores- do it individually!

  5. Let the chocolate harden on the counter for at least 30 minutes. Or place in the refrigerator for 10 minutes.

  6. Second coat! Okay, I think the ultimate key to making these look like a pro is repeating the process. Yes, it is a lot of extra work, but if you do only one coat it isn’t a very equal coffee-chocolate ratio (It ends up being a lot of coffee bean with a some chocolate). When you repeat, I would just dunk the beans into the melted chocolate.
